Today I wanted to talk about a festival I’ve been attending for years and I highly recommend it to electronic music lovers. The Day Zero Tulum takes place now on January 10, 2021 and has a special Line Up that includes Damian Lazarus, DJ tennis, Bedouin and many more.
The Day Zero experience is based on the pillars of immersion and cultural connectivity, sharing space between the ancient world and modern humanity. From sunset to sunrise, every moment is woven into the energy structure of the place. Centered on an outdoor kitchen, Tulum Treehouse is a hybrid inn that facilitates the exchange between artisans, chefs, farmers, artists and designers for the preservation and evolution of Mexican artisanal traditions. During my last season of 4 months in Tulum in the year 2021 the charming Oasis in the center of the hotel zone was my residence. I can safely say that this secret invite-only hideaway is one of my favorite spots in town.
The small hotel has a restaurant too, just for guests and friends of friends. The entire season always brings one of the best chefs from Mexico and the world to pilot your kitchen. Not enough, the place still receives several artists from the music scene and holds events 4 times a week.

THE KITCHEN
The in-house kitchen delights in the natural generosity of Mexico and the diversity of its regional cuisine. The rotating seasonal dishes are cooked over an open fire powered exclusively by wood. Corn, the heart and soul of Mexican culinary culture, is finely ground in a stone mill and prepared using techniques that date back to pre-Hispanic times, including ancient forms of fermentation. Together, we engage in the discourse on the future of food culture through workshops, experimentation and artistic collaborations led by Edoardo Fiaschi, Slow Executive Chef who comes to us through Noma. Closed during the day for all guests except overnight, we open at night for those with dinner reservations.

ARTISAN STUDIO
We invite our residents to investigate new cultural dialogues and possibilities for preserving traditional knowledge. Recent resident artists include Carlito Dalceggio, a visual artist whose work weaves mythology with reflections on Mayan traditions and ancient clay techniques, and Uxii, a self-taught Merida artist and ceramist who investigates pre-Hispanic clay sculpture. The Zamna Festival is an immersive electronic experience that takes place in one of the most amazing places on the planet, in the heart of Tulum.
In recent years Zamna Tulum has become the meeting point for a wide variety of musical events including some of the most prestigious electronic music parties in the world. The Mountain of Salvation must be seen close to be fully appreciated, as those who have made the journey will attest.
Its 50-foot height and 150-foot width are made entirely from local adobe clay and paint, being truly unique in the United States and most likely in the world.
From the Sea of Galilee, deep down, the great red heart in the middle, to the cross at the top, the recurring theme of “Love” is everywhere on the Mountain of Salvation. This place is a visionary setting spanning a hill in the Colorado desert, north of Calipatria, near the slab city, several miles from the Salton Sea. It is in Imperial County, California.

The area is dry and not very pretty, but the artwork is incredible, made of adobe, straw, and thousands of gallons of lead – free paint.

It was created by local resident Leonard Knight (1931 – 2014). It encompasses numerous murals and painted areas with Christian expressions and Bible verses, although his philosophy was built around prayer the sinner.
The Folk Art Society of America declared “a folk art in a place worthy of preservation and protection” in 2000.

This mountain is Leonard’s tribute to God and his gift to the world, with his simple but powerful message: “God is love.”
Leonard’s passion lovingly created this brilliant work of resplendent “outsider” art not only from biblical and religious scriptures such as the Lord’s Prayer, John 3:16, and the Sinner’s Prayer, but also including flowers, trees, waterfalls, suns, bluebirds and many other fascinating and colorful objects.

Founded and led by the couple Jorge Vallejo and Alejandra
Flores, the Quintonil restaurant is since 2015 in the list of the 50 best
restaurants in the world, now occupying the 9th place.
The chef Jorge Vallejo,
although new, has a load of gastronomic experiences to envy. Vallejo graduated
in culinary arts at Ambrosia, her first professional experience in the kitchen
was working on cruises around the world. From there the chef worked in the
kitchens of Pujol, the Condessa DF hotels, Habita, Hotel Capital District and
in 2010 he served as executive chef of the St Regis kitchen.
Alejandra Flores holds a
degree in restaurant management from CESSA, a master in business administration
with a hospital focus and a marketing specialist at the Les Roches education
center in Switzerland. It was working at Pujol that Alejandra and Jorge met,
she was director of operations for the restaurant and Enrique Olvera Group.
When Chef left the hotels, he
embarked on a knowledge experience in Copenhagen. Back in Mexico, Vallejo and
his wife decided to open their own restaurant: O Quintonil, where Alejandra
runs the salon and manages and Vallejo leads the kitchen and menu.
In the renowned
high-gastronomic restaurant, the dishes served to carry all the knowledge the
chef has brought cooking and studying in kitchens around the world. What makes
the menu even more incredible is the use of ingredients typical of Mexican
cuisine that are taken from a garden that has in the restaurant itself, thanks
to the initiative Origins, founded by Vallejo in partnership with chefs Mauro
Colagreco, restaurant Mirazur, in France and Virgilio Martinez, who heads the
restaurant Central in Peru. The initiative seeks to keep ingredients, techniques,
and customs of the kitchen of small Latin American communities, without using
pesticides or any artificial ingredient.
Speaking of the menu, the
restaurant presents only the option of a tasting menu that undergoes changes
during the year due to the availability of ingredients. This happens with both
dishes, as well as desserts and even with the wine and drinks menu. My choice
was a 12-course option, where what most charmed me was the reinvention of
guacamole, worth a try. The desserts are also stunning, very appetizing.
Quintonil, when compared to
another famous and respected restaurant in Mexico, Pujol, could have impressed
more, yet it is a sensational restaurant. The presentations were spotless, the
dishes delicious and the place is super cozy and beautiful. One of the mottos
of the place is to welcome the customers well and treat them like family as
well as all the staff and this is very well passed on to those going to the
restaurant.
I was very well received and
met there, it was a great pleasure to be with the whole Quintonil team and to
have this new gastronomic experience. I hope to come back!
